What it means
The sentence only works as a ranking under conflict. Jane is not saying dignity is worthless — she is saying she knows which one she drops when the two pull apart, and I would always makes that a settled policy rather than a mood. The whole weight sits on the word rather, which presumes a forced choice.
What dignity means here is worth spelling out, because it is not an inner quality. It is standing: being seen to behave correctly, the one asset a penniless governess has and can least afford to spend. That is what makes the preference expensive. Most people who quote the line are not being asked to give up anything by choosing happiness, which means they are agreeing to a trade they have not been offered.
What it teaches you
The next time you frame a decision as dignity versus happiness, name what the dignity is actually buying — whose good opinion, what protection, what future door it keeps open. If the answer is nothing much, you are not making Jane’s choice; you are just doing what you wanted and borrowing her sentence for it. The trade only counts when refusing it would have cost you something real.

Jane, choosing warmth over propriety in a small moment with St John Rivers. Brontë follows it with a semicolon and then Jane running after him, which is the whole point.
Quoted as a standalone maxim it sounds like self-care. In place it is a specific rejection of the cold, correct, dutiful life St John is offering her.
